My Recipe

Everyone asks me for my barbecue secret, its really no secret, just one recipe out of thousands of others.  So here it goes,

Beef or Pork Ribs

1 Bottle of 7up

1 whole Lime if you want mesquite, 1 lemon if you want hickory

3 Cloves of garlic, minced

Now you take your ribs, place into a large casserole, layer the bottom of the casserole with very thin slices of lime, or lemon, and spread the mince garlic over the tops of the slices, layer the ribs in the casserole, and pour the 7up over the top of the ribs, place into refrigerator for at least 3 1/2 hours, preferably 4 to 6 hours.  This will allow the meat to marinate, with the flavors of lime or lemon and garlic.

While you are waiting for the meat to marinate, you want to make your homemade BBQ sauce, or you can use you flavor of sauce, but try kicking it up a little, add some finally crushed pecans, or walnuts, if you want it a little more sweeter, add raw honey or molasses.

When there is about half and hour left for the meat to marinate, start you grill at this time.  I prefer to use charcoal, and when the coals are nice and white, I sprinkle mesquite or hickory over the top.  ( before you use the chips, soak them in water for about 1 minute to two minutes) then place the lid over the top of your cooker, and get your ribs ready for BBQ.

You now want to drain, your ribs, sprinkle any seasonings you want, and lay them on the grill, replace the lid and let the smoke cook them for at least 12 to 15 minutes, then flip over the ribs, and lightly glaze the ribs with your sauce, and replace then lid, and let cook for another 8 minutes, flipping over, and glazing the ribs again with your sauce, then every two minutes, heavy glaze your ribs, and keep this up for two or three times, remove, serve.
